Day 152: Krusciki (with recipe!)

Every year when I was little my family used to make these fried treats for xmas. Then when I moved out they stopped. A few years ago my spouse and I decided to start up the tradition again. Two batches take most of a day to make but they’re totally worth it!My mom’s recipe – makes 4-6 dozen depending how thin you roll them:

3 cups flour               1/4 teaspoon salt
3 whole eggs             1 oz rum
4 egg yolks                1 teaspoon baking powder
1/2 cup sugar            powdered sugar
1/4 cup butter           shortening for frying

Combine flour, sugar, salt, and baking powder in a large mixing bowl.

Melt butter.

Combine eggs, egg yolks, butter, and rum. Give an extra shot of rum to the cook(s)!

Add egg mixture to dry ingredients and mix together until the dough does not stick to the side of the bowl. I find it is easiest to mix the dough with my bare hands. You may need to add some extra flour if it is too sticky.

Roll out the dough very thin, and cut into approx. 4 x 2 inch strips.

Cut a small slit in the center of each strip and pull one end through to form a “bow tie”.

Let rest for ~1/2 hour for dough to dry.

Fry until golden. Drain and rest on parchment paper.

While cooling, sprinkle with powdered sugar. If you want to be unconventional, add a small amount of cinnamon or cocoa powder to the powdered sugar.
