My grandmother was a prolific baker. When I was growing up it seemed like there was always cake at her house when I visited. Her signature cake was a hot milk cake with homemade chocolate fudge icing, but my favorite was always her lemon apricot cake. She made me one for my birthday every year for many years. My birthday came and went during this pandemic, but I decided to make myself a lemon apricot “birthday cake” just because.
I used a box of lemon cake mix, but substituted apricot nectar instead of water. The icing is homemade, from fresh squeezed lemon juice, lemon zest, powdered sugar, and butter. It’s not exactly like the ones my grandmother used to make, but it’s still really good!
